Extensively trained in Cantonese restaurants after graduating from culinary school.
Moved to Hong Kong to train for two and a half years mainly focusing on roasts and dim sum, both in luxury restuarants and food stalls.
Studied Szechuan cuisine after returning to Tokyo.
After over 20 years of gaining expereince in a variety of Chinese cuisine, opened Ippeihanten in 2022.
